Considered the finest restaurant in Singapore and consistently in any list of the world’s best, Restaurant André is the eponymous dining room of Taiwanese-born chef-patron André Chiang. In a culture where it can take ten years or more to establish an identity and a worldwide reputation, Chiang has done it in less than five.

Taught by the masters of classic French cuisine including Joël Robuchon, Pierre Gagnaire and Michel Troisgros, Chiang offers Singapore’s discerning diners his beautifully creative reinterpretation of southern French food with a Mediterranean twist as well as a Blumenthal-esque nod to molecular gastronomy.

Serving just 30 covers a night in a relaxed, relatively informal setting compared to other high-end restaurants around the world, the dinner menu is ‘prix fixe’ at S$298 and the lunch menu is a little more palatable at S$129 but you will forget the price when you experience his food.

Working to an ethos he calls ‘Octaphilosophy’, each of the eight courses on the tasting menu reflects his experience of working in France, China, the Seychelles and of course in Singapore and your palate will dance with some of the most stunningly-prepared dishes you will ever have the joy to see and taste.

His signature dish is called Memory – warm foie gras jelly with black truffle coulis and the wine list focuses of artisanal French wines.

Restaurants in Taipei and Paris have followed but in this 19th century terraced house in Chinatown which is easy to miss if you don’t know what you’re looking for, André Chiang has created something very, very special indeed.
